As a Portland wedding photographer I have had the extreme pleasure of working with Fat Cupcake at a number of weddings. They are one of my favorite shops for cupcakes. As the newest member of my elopement package team, I asked Anjelica Otness, Fat Cupcake's founder, to share some insights with all of us!
What do you love about being a baker?
Getting to engage with our clients, hear their dreams for dessert and create something beautiful!
What is your favorite wedding dessert trend for this or the upcoming season?
I love the look of wedding cakes with a deckled edge.
Personally, what is your favorite type of wedding cake or dessert?
Pink champagne cake with white chocolate mousse filling!
What is one piece of advice you would give to engaged couples when it comes to choosing a cake or dessert for their wedding?
If you’re getting cupcakes or a stacked cake for your wedding, get multiple flavors so your guests have options to choose from.
What would you recommend couples do with any leftovers after the wedding?
Share them with your guests as a treat to take home. Or have a family member tightly seal the leftovers in a container and freeze them for you. Then you can eat them when you get back from the honeymoon.
Does your company offer cakes or treats for people with dietary restrictions?
YES! We offer vegan and wheat free cupcakes.
Anything else you want to add or share about you, your business, or wedding day treats, cakes and desserts?
We offer cupcakes, cupcake towers, cutting cakes, stacked wedding cakes, set up, delivery and a cupcake food cart so everyone can find something special! It’s an honor to be part of such a special day and having an opportunity to serve our clients!
